Ingredients
  • 2 avocados, halved
  • 1 cup basil leaves
  • ⅓ cup pine nuts, toasted & cooled
  • ½ cup grated Parmesan cheese
  • ¼ cup olive oil
  • 1 garlic clove, crushed
  • 4 cups uncooked penne pasta
Steps
  1. Follow packaged directions to cook penne. Drain, set aside to let cool.
  2. Place avocados, pine nuts, basil, garlic & olive oil into a food processor & blend until smooth. Transfer from processor into a bowl.
  3. Stir through half the Parmesan, then add the penne.
  4. Gently toss to distribute pesto.
  5. Sprinkle remaining parmesan & add salt & pepper to serve.
