Bean BBQ Sausages
Vegan
Ingredients
  • SAUSAGES
  • 1 red onion
  • ½ red pepper
  • ½ yellow pepper
  • 1 Portebello mushroom - large
  • 4 garlic clove
  • 3 tblsp paprika
  • Salt & Pepper
  • Zest of 1 lemon (unwaxed)
  • Sprig of Rosemary
  • 1 tblsp Lemon Thyme
  • 1 tin Red Kidney Beans
  • 1 tin Cannellini Beans
  • ¼ cup chopped walnuts
  • 5 tblsp Buck Wheat flour
  • SALSA VERDE
  • Bunch parsley, oregano & chives (any soft herbs)
  • 2 tblsp capers
  • 3 cocktail gerkins
  • 1 tblsp mustard (Dijon)
  • 3 tblsp Red wine vinegar
  • Salt & Pepper to taste
  • 1 tblsp Olive oil
Steps
  1. Finely dice: red & yellow pepper + onion + mushroom (gills & skin removed)
  2. Crush 3 garlic cloves
  3. Add diced onion & 3 crushed garlic cloves to frying pan using coconut oil over medium heat
  4. Add: peppers + mushroom + paprika + salt & pepper + lemon zest (leaving pinch lemon zest for Salsa Verde)
  5. Rinse, drain & 'pat' dry beans & place in bowl
  6. Add cooked veg & onion mixture to beans, mix & lightly 'mash' beans leaving chunky texture
  7. Add finely chopped walnuts & add flour & mix well
  8. Roll into sausages & wrap tight in parchment paper then wrap tightly in foil
  9. Steam or poach for 30 minutes
  10. SALSA VERDE:  Finely chopped herbs + capers + gerkins & 1 garlic clove, add vinegar + mustard + salt & pepper + lemon zest & mix
  11. Unwrap sausages & massage each with  oil & BBQ or fry
  12. Serve with fresh salad & flat bread
