Maple-Mustard Sweet Potato Bowl
Suggested adult serving: 1¾ cups
Ingredients
  • 2 lbs sweet potatoes
  • peeled & cut into large dice (≈6 cups)
  • 2 tablespoons pure maple syrup   plus more for serving
  • 2 tablespoons coarse-grained mustard
  • 2⁄3 cup unflavored plant milk   plus more as needed
  • sea salt
  • freshly ground black pepper
  • 1 yellow onion
  • chopped (≈1 cup)
  • 2 cloves garlic
  • minced (≈2 teaspoons)
  • 10 oz baby spinach   (≈12 cups)
  • 2 pears   coarsely chopped
  • 1⁄4 cup dried cranberries
  • 1⁄4 cup millet   rinsed & drained
  • 1⁄4 cup roasted pecans   chopped
  • Millet: Feel free to substitute quinoa if you are having a tough time finding millet.
