  • 1 ½ pounds bone-in skinless chicken breasts and/or thighs, can cut chicken breasts in half if very large
  • salt and freshly ground black pepper, to taste
  • 1 ½ tablespoons paprika
  • 1 tablespoon butter
  • 8 baby Yukon Gold potatoes or red potatoes, cut in half
  • 1 medium yellow or red onion, chopped
  • 4 or 5 medium carrots, sliced ½-inch thick
  • 1 tablespoon all-purpose flour
  • 1 cup dry white wine, like Pinot Gris or Sauvignon Blanc
  • 1 cup low-sodium chicken broth
  • 2 tablespoons herbs de Provence
  • ¼ cup chopped fresh parsley
