A quick and easy lunch option – Greek quesadillas, filled with black olives, tomatoes, feta cheese, and lots more!
Ingredients
  • 2 large flour tortillas
  • ½ small red onion, finely diced
  • 6 cherry tomatoes, roughly chopped
  • 1 tbsp roughly crumbled feta cheese
  • 1 tbsp sliced black olives
  • Few sprigs fresh parsley, roughly chopped
  • 50 g cheddar cheese, grated (~ ½ cup when grated)
  • 2 tbsp tzatziki, to serve (optional)
