Healthy Baked Chicken Parmesan ⋆ Skinny Me Recipes

Ingredients
  • 1 1⁄2 pound(s) uncooked boneless skinless chicken breast cutlets
  • 3 pound(s) fresh tomato(es), Roma work best
  • Vegetable spray to coat the pan, I use Pam Olive Oil
  • 1 Tbsp olive oil
  • 6 medium clove(s) garlic, minced
  • 3 Tbsp basil, chopped
  • 2 Tbsp fresh oregano, chopped
  • 1 Tbsp kosher salt, or to taste
  • 1 tsp black pepper, freshly ground
  • 3oz part-skim mozzarella cheese, sliced
  • 1⁄4 cup grated Parmesan cheese, freshly grated

  • Food Processor, to puree the tomatoes
  • Strainer, to get out the tomato juices
  • Frying Pan, Stainless Steel to put in the oven
  • Grater for fresh Parmesan
