Garlic Parmesan Roasted Vegetables

  • 2 tablespoons balsamic vinegar
  • 2 to 3 cloves garlic minced
  • 2 tablespoons grated parmesan cheese
  • 2 teaspoons dried rosemary
  • 1 teaspoon dried thyme
  • salt and fresh ground pepper to taste
  • fresh grated parmesan (optional) for garnish
  • fresh chopped parsley (optional) for garnish
