Best Instant Pot Vegan Jambalaya {With White or Brown Rice}
Ingredients
  • 1 medium onion, diced
  • 1 green bell pepper, seeded and diced
  • 3 ribs celery, diced
  • 4 garlic cloves, minced
  • 1 ½ cup long grain white or brown rice*, unrinsed
  • 1 15 oz can small diced tomatoes, drained
  • 1 to 2 Tbsp salt-free Cajun seasoning
  • 2 tsp smoked paprika
  • 2 chipotle Field Roast sausages**
  • 3 cups vegetable broth or water, plus more for sautéing the vegetables
  • Salt, black pepper to taste
  • 2 Tbsp avocado oil/additional veggie broth, for sauteing
  • ¼ cup chopped fresh parsley
