Instant Pot Low Country Boil by Gayle Bell
Just like the lobster pots in New England!

Servings: 2 to 4

Ingredients
  • 4 small Red or White Potatoes, washed
  • Sausage of your choice. (I will leave it out next time, not a fan)
  • 2 Ears of corn broken in half
  • 2 to 4 Lobster Tails
  • 1 lb X-Large raw shrimp, cleaned and deveined, I used fresh but frozen works.
  • 1 lb Large Scallops
  • 3 doz Middle neck clams, or whatever you can get you hands on. Scrubbed to remove dirt.
  • 1 Stick of Butter, cold
  • 1 tbsp Old Bay
  • 1 Bottle Guinness Dark Ale, regular beer or 1 cup of water with a chicken or lobster base from better than bullion.
Steps
  1. This dish is about layering.
  2. Start by laying the potatoes and sausage on bottom.
  3. Corn around edges.
  4. Stack the lobster tails in the middle.
  5. Shrimp on one side, scallops on the other.
  6. Then lay the clams on top.
  7. Stick of butter on top of the clams with old bay sprinkled on top.
  8. Pour the bottle of Guinness Dark Ale over the top. Or any other liquid of choice.
  9. Pressure cook 3 minutes with QR.
  10. Best ever!
Notes
  • Depending on availability you can use fresh or frozen seafood. It must be raw.
  • It's best to use lobster tails not whole, they would have to be so small to fit in the pot, I wouldn't bother.
