Potato Ham and Cheese Soup

Ingredients
- 1 large onion diced
- 2 TBS butter
- 6 cups diced potatoes small pieces
- 4 cups chicken broth
- 2 cups diced ham
- 2 cups Colby jack shredded cheese
- 2 cups heavy cream
- salt and pepper to taste
Steps
- Saute onion in butter 5 mins.
- Add potatoes, ham and 2 cups chicken broth. Seal pot and cook High pressure for 6 mins. NPR 10 mins. QR rest of pressure.
- Turn to high Saute. Add 2 cups chicken broth and cheese, stirring until melted.
- Add heavy cream. Heat until hot. Do not boil!
- Salt and pepper to taste.
Notes
- Freezes well. Do not boil once cream added. Can substitute almond milk, but will need to thicken or use immersion blender.
