Potato Ham and Cheese Soup

Ingredients
  • 1 large onion diced
  • 2 TBS butter
  • 6 cups diced potatoes small pieces
  • 4 cups chicken broth
  • 2 cups diced ham
  • 2 cups Colby jack shredded cheese
  • 2 cups heavy cream
  • salt and pepper to taste
Steps
  1. Saute onion in butter 5 mins.
  2. Add potatoes, ham and 2 cups chicken broth. Seal pot and cook High pressure for 6 mins. NPR 10 mins. QR rest of pressure.
  3. Turn to high Saute. Add 2 cups chicken broth and cheese, stirring until melted.
  4. Add heavy cream. Heat until hot. Do not boil!
  5. Salt and pepper to taste.
Notes
  • Freezes well. Do not boil once cream added. Can substitute almond milk, but will need to thicken or use immersion blender.
