  • 1 lb fresh okra, sliced, or use frozen if fresh is not available
  • 1 cup tomato puree
  • 3 bay leaves
  • 2 teaspoons dried thyme
  • 1 teaspoon black pepper
  • ½ to 1 teaspoon cayenne (see note)
  • 1 lb (about .5 kg) smoked tofu (see NOTES)
  • salt, to taste
  • Gumbo file powder, optional
  • Tabasco sauce
  • Hot cooked rice
