Tomato Chicken Bisque (S) P. 93
Ingredients
  • 2 lbs chicken breast (s) (2 to 2.5 lbs, cooked and diced)
  • 29 oz diced tomatoes (2 to 14.5 cans or 3.5 cups of homemade stewed tomatoes)
  • 7.5 oz coconut milk (½ of a 15 oz can full-fat coconut milk)
  • 9 oz tomato paste (1.5 - 6 oz cans tomato paste)
  • 1 Tbsp mineral salt
  • ¼ tsp black pepper
  • ¼ tsp cayenne pepper
  • 1 tsp onion powder
  • ½ tsp garlic powder
  • ¼ cup nutritional yeast
  • ½ cup parsley (finely diced, destalked fresh, or 1 Tbsp dried)
  • 5 cups water (5 to 6 cups of hot, but not quite boiling water)
  • 2 Tbsp extra virgin coconut oil (extra virgin)
  • 2 Tbsp THM Just Gelatin (optional)
  • 2 cups frozen okra (diced)
