Italian Rice Balls (Arancini)- the Slow Roasted Italian
Ingredients
  • 3 tablespoons salted butter
  • 1 tablespoon olive oil
  • ½ cup diced onion
  • 2 garlic cloves, minced
  • ½ cup white wine
  • 1 ½ cups long-grain white rice, we used Jasmine
  • 1 teaspoon chopped fresh parsley
  • 1 teaspoon chopped fresh oregano
  • 1 teaspoon chopped fresh basil
  • 4 cups chicken broth, divided
  • ½ cup freshly grated parmesan cheese, plus more for garnish
  • salt and pepper, to taste
  • 8 ounces mozzarella cheese, cut into 18 chunks
  • 1 cup all-purpose flour
  • 3 large eggs, beaten
  • 1 ½ cups Italian-style breadcrumbs
  • Vegetable oil for frying
