Pinto Bean and Hominy Pozole Rojo with Queso Fresco
Ingredients
  • 1 organic yellow onion (1-½ to 2)
  • mild chile spice blend (ancho chile powder - sweet paprika - granulated garlic - cumin)
  • 1½ cups cooked pinto beans (2 cups/cans)
  • 1 cup cooked hominy (2 cups/cans)
  • 1 organic lime (2)
  • 1 cup diced tomatoes (2 cups/cans)
  • 2 (4)ounces organic shredded green or other cabbage (can sub chopped onions)
  • 1½ (3) ounces queso fresco (can sub desire shredded cheddar or other cheese)
