Ingredients
  • 3 tbsp vegetable or canola oil

  • 3 lbs pork shoulder, cut into big chunks about 2-½” pieces

  • ½ cup dark soy sauce (If you can buy soy sauce and cane vinegar from the Philippines, it's better for this dish) if not, just use Kikkoman Dark Soy Sauce
  • ½ tbsp ABC Sweet Soy Sauce (if you don't have this, just add 1-½ tbsp brown sugar)
  • ⅓ cup white cane vinegar or cider vinegar or distilled vinegar
  • 2 tsp whole peppercorns or cracked peppers
  • subheading: Other Ingredients:
  • 1 tsp sriracha chili sauce, optional
  • 3 dried bay leaves
  • 2 tbsp ketchup
  • 1-¼ cup water
  •  
  • 8 oz. white button mushrooms, sliced into halves if they're big
  • 4 scallions, sliced into 3” pieces
