Ginger and green onion chicken breast with mixed veggies by Rich Lum
Cooked in a 6 qt IP
Ingredients
  • 1 chicken breast
  • 5 to 6 ginger rounds julienned
  • 1 clove garlic sliced
  • 1 cup Sake..you can sub with dry sherry or chicken broth
  • 2 tablespoons Tamari or soy sauce
  • Pinch of white pepper
  • Pinch of salt
  •  
  • Cornstarch slurry to thicken sauce
  •  
  • Veggies
  •  
  • Sliced and julienned carrots
  • Sliced celery
  • Chopped yellow onion
  • Slice baby bell peppers
  • Sliced red onion
  • Shredded cabbage
  • Broccoli florets
  • ⅛ cup chicken broth
  • Salt and pepper to taste
Steps
  1. In a bowl mix the Sake, Tamari, ginger, garlic, white pepper and salt.
  2. Place your fresh or frozen breast into a 7.75" loaf pan and pour the marinade over it ( if using fresh, allow to marinate for 30 minute or overnight)
  3. Put 1 cup of water in your IP pot, place the trivet in with the loaf pan on top
  4. Close and seal your lid. Set the pot to manual 14 minutes and allow a 10 minute NPR .( this was a 10 ounce breast and I cook breasts for 1 minute per ounce with a 10 minute NPR .  If I'm cooking them pip in a marinade I add 4 minutes)
  5. While the chicken is cooking prep your veggies and put them in a 7.75" loaf pan. Mix ⅛ cup of water with ¼ teaspoon of miso and pour over the veggies. Cover tightly with foil.
  6. When chicken has finished remove and place the breast on a cutting board, tent with foil to keep warm.
  7. Empty the water in your pot and put in 1 cup of cold tap water. Put your trivet in with the veggie pan on top. Close and seal your lid.  Set your pot to manual 4 minutes and do a QR
  8. While the veggies are cooking, pour  marinade into a small sauce pan over medium high heat, when it begins to boil add the cornstarch slurry a little at a time until it reaches the desired thickness.
  9. Slice and plate your chicken and pour the sauce over it. Serve with the veggies
Notes
  • By covering your veggies with foil and cooking for 4 minutes you'll have hot but crunchy veggies. Of course the onions will be soft but everything else will have a good bite
