Chicken Pad Thai
Ingredients
  • 200g rice noodles
  • 400g chicken breast (about 2 small breasts)
  • 1 large carrot, thinly sliced length ways.
  • 2 eggs
  • 1 ½ tbsp cooking oil
  • 1 cup bean sprouts
  • 70g chopped peanuts
  • Salt and pepper
  • Water
  • subheading: For the sauce:
  • 3 tablespoons fish sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon lemon or lime juice
  • 1 teaspoon chili flakes (adjust to taste)
