Ingredients
  • 10 Medium sea scallops (washed and thawed)
  • 5 Strips of bacon (center cut)
  • 1 lemon
  • Salt
  • Pepper
  • Garlic salt
  • Brown sugar
  • Maple syrup
  • Spinach or lettuce for base
  • Toothpicks (wooden)
Steps
  1. Remove the side muscle from each scallop and pat dry with paper towel.
  2. Cut 5 bacon strips in half. If bacon is too small use whole pieces and do not cut in half.
  3. Place bacon in air fryer and partially cook bacon for 4 minutes at 400°. It’s okay to do it in batches. Pull out when done and set aside to cool.
  4. Slice lemon into eight pieces. Set aside. You will use two slices for cooking and 6 for garnish
  5. Wrap a piece of partially cooked bacon around each scallop. Secure with a wooden toothpick.
  6. Top each scallop with with a small bit of brown sugar and a drop of maple syrup.
  7. Salt, pepper and garlic powder to taste.
  8. Squeeze one lemon slice across scallops.
  9. Place in air fryer and cook for 6 minutes at 400°. Remove and turn each scallop over and add small amount of brown sugar and a drop of maple syrup to each scallop.
  10. Salt, pepper and garlic powder to taste.
  11. Squeeze second lemon slice across scallops.
  12. Place back in air fryer and cook for another 6 minutes at 400°.
  13. When done remove scallops from fryer, remove toothpicks and place on a bed of lettuce/spinach m. Garnish with other lemon slices.
  14. Add more ground pepper if desired.
  15. Serve immediately
