Summer Vegetable and Sausage Lasagna
Ingredients
  • 1 small zucchini, sliced crosswise ¼-inch thick
  • 1 Japanese eggplant, sliced crosswise ¼-inch thick
  • 1 red, orange or yellow bell pepper, cored, seeded and cut into 6 pieces
  • 3 tablespoons olive oil
  • 3 links uncooked turkey sausage (about ½ pound)
  • Kosher salt and freshly ground pepper to taste
  • 1½ cups pasta sauce
  • 2 large eggs
  • 1 16-ounce container ricotta
  • ½ teaspoon dried basil
  • 1 teaspoons dried oregano
  • ½ cup shredded Parmesan cheese, divided
  • Kosher or coarse salt and freshly ground pepper to taste
  • 6 no-cook lasagna noodles (1 8-ounce package of noodles will usually have 14 in it)
  • 1½ cups shredded mozzarella, preferably fresh (about ½ pound)
