Coq Au Vin (Red Wine Braised Chicken)
Ingredients
  • 2 tbsp extra-virgin olive oil
  • 4 pieces of bacon, diced
  • 4 boneless, skinless chicken breasts

  • 8oz baby portabella mushrooms, sliced in half
  • ½ pound carrots (about 4 to 5), peeled and cut into 1 to 2" pieces
  • 8oz frozen pearl onions
  • ¼ cup brandy
  • ½ bottle of dry red wine
  • 1 cup chicken stock
  • 7 sprigs fresh thyme
  • 1 bay leaf
  • 2 tbsp unsalted butter, room temperature
  • 2 tbsp all purpose flour
