Sweeeeeet Potatoes
PIP cooking in a 6 qt IP. I used a 7" cake pan
Ingredients
  • 1 pound sweet potatoes..peeled, cut into quarters lengthwise then cut into ¼" pieces
  • ½ of a medium red onion...¼" slices..separated
  • ¼ cup butter...4 tablespoons...cut into pats
  • ½ cup packed brown sugar
  • ½ teaspoon salt
  • ¼ teaspoon pepper
Steps
  1. In a 7" cake pan
  2. Add pats of butter, sweet potatoes, onion
  3. Season with salt and pepper
  4. Sprinkle on brown sugar
  5. Put 1 cup of water in your pot and place trivet in
  6. Lower your filled cake pan into the pot with a sling
  7. Close and seal the lid
  8. Set your pot to Manual 10 minutes. Perform a QR when cooking is done
  9. Remove and serve
Notes
  • You can make a sling with heavy duty foil. Make the sling three layers thick and as wide as possible. I use a pair of kitchen gloves to remove the pan.
  • I have stacked 2 pans in my 6 qt pot using two trivets.
