Butternut Squash Curry (Vegan, One-Pot, Gf)
  • 1 large onion diced
  • 3 cloves garlic minced
  • 2 tbsp ginger root minced
  • 2 tbsp red curry paste
  • 1 tbsp curry powder
  • 1 tsp ground coriander
  • 1/2 tsp ground cumin
  • 1/2 tsp ground turmeric
  • 1/2 tsp cayenne plus more to taste; I used 1 tsp
  • 1 medium butternut squash peeled and cut into cubes
  • 2 large ripe tomatoes pureed or diced
  • 1/2 cup water
  • 1 14-oz can coconut milk preferably full-fat
  • 1/2 head broccoli chopped
  • salt, pepper, and lemon juice to taste
