Fluffy Banana Cake with Banana Filling

  • 2 cups sugar
  • 3 large eggs, separated and room temperature
  • 2 teaspoons vanilla extract
  • 1 teaspoon (optional) banana extract
  • 1 ½ cups buttermilk, room temperature
