Sauerkraut Potato Salad
Ingredients
  • 2 lbs (1 kg) small potatoes
  • 1 ½ cups (325 ml) drained sauerkraut (save the juice)
  • 2 teaspoon (10 ml) caraway seeds
  • ¼ cup (60 ml) grapeseed oil
  • 1 teaspoon dijon mustard
  • ½ cup (125 ml) sliced chives or green onions
  • ½ teaspoon (2.5 ml) coarsely ground black pepper
  • 3 tablespoon (45 ml) reserved sauerkraut juice
