  • ½ cup honey
  • 1 cup brandy or cognac
  • 4 thyme sprigs
  • 1 shallot, thinly sliced
  • 3 tablespoons whole-grain mustard, like Maille
  • 2 tablespoons butter
  • Kosher salt and pepper, to taste
