Caribbean-Inspired Chicken Stew
Ingredients
  • 2 teaspoons ground turmeric

  • 1 onion, thinly sliced
  • 4 cloves garlic, thinly sliced
  • One 1-inch piece fresh ginger, minced
  • ¼ to ½ teaspoon cayenne pepper
  • 3 large carrots, cut into 1-inch pieces
  • 2 celery stalks, cut into 1-inch pieces
  • 5 new potatoes, cut into quarters
  • 2 cups low-sodium chicken broth
  • One 13.5-ounce can unsweetened coconut milk
  • 1 bay leaf
  • 3 tablespoons all-purpose flour
  • Cooked long grain white rice, for serving (optional)
  • ¼ cup fresh cilantro leaves, for garnish
