Vegan Chilli with Coriander Lime Pesto
Ingredients
  • 2 tbs olive oil
  • 3 cloves of garlic, minced
  • 1 brown onion, finely diced
  • 2 carrots, finely diced
  • 1 stick of celery, finely diced
  • 1 capsicum, finely diced (use any colour, I prefer red)
  • 2 x cans of black beans, drained and rinsed OR 2 cups of pre-cooked black beans
  • 2 x 810g (or 4 x 410g) cans of diced or crushed tomatoes
  • 1 x chipotle chilli in adobo sauce, diced (more if you aren’t adversely affected by chilli - i.e. it doesn’t make your hot flushes and night sweats worse)
  • 1 tbs ground cumin
  • salt to taste
