Rukmini Iyer's Quick and Easy Baked Gnocchi with Mozzarella
Ingredients
  • 500g vacuum-packed gnocchi
  • 250g cherry tomatoes, halved
  • 2 to 3 red or yellow peppers, pith and seeds removed, flesh roughly chopped
  • 2 tbsp olive oil
  • 2 fat garlic cloves, peeled and finely grated
  • 1 tsp chilli flakes
  • 1 tsp fennel seeds
  • 1 tsp sea salt flakes
  • 250g-400g firm mozzarella (look for “mozzarella cucina” on the label), sliced
