Gluten Free Mini-Biscuits à la Tik Tok

  • 6 Tbs frozen butter -- grated
  • 2 cups Bob's Red Mill Cup for Cup gluten free flour
  • 1 Tbs baking powder
  • 1 tsp salt (maybe a little more next time?)
  • 2 Tbs white sugar
  • 1 cup buttermilk
  • 1 egg
  1. Preheat oven to 450°
  2. Grate 6 Tbs of frozen butter; return it to the freezer
  3. Whisk together flour, baking powder, salt, sugar
  4. Add buttermilk and butter; mix together with a spoon
  5. Add one egg
  6. Using hands, form into a crumbly dough
  7. Flatten dough on floured surface, no less than 1" thick
  8. Flour to the top of the dough, fold, re-flour the top. Do this twice.
  9. Using a floured champagne flute, cut them out into mini biscuits.
  10. Refold x2 and cut more biscuits as necessary.
  11. Bake for 15 minutes at 450°
  12. Brush with melted butter
