Pecan pie cookies

Ingredients
  • 1 pkg Pillsbury sugar cookie dough
  • 1 ½ cups chopped pecan
  • 3 Tbsp butter
  • ½ cup brown sugar
  • ⅓ cup corn syrup
  • ¼ tsp salt
  • 1 ½ tsp vanilla
  • ¼ cup powdered sugar for dusting - optional
Steps
  1. Preheat oven to 350
  2. Spray muffin pan with cooking spray
  3. Slice cookie dough into ½” slices.
  4. Place one slice into each section of pan.
  5. Bake 10 minutes or until edges are golden.
  6. Place butter, sugar, corn syrup, salt in medium saucepan and bring to boil.
  7. Remove from heat stir in vanilla and pecans.
  8. Allow cookies to cool completely in pan before removing them.
  9. Place 2 heaping Tbsp of pecans into each cookie.
  10. Allow filling to cool, dust with powered sugar before serving.
