Spinach Stuffed Chicken
Ingredients
  • Splash of EVOO
  • 50 grams fresh spinach
  • 50 grams ricotta cheese
  • 2 chicken breasts
  • 20 grams shredded cheese
  • Paprika
  • Salt and pepper
Steps
  1. Cook spinach over medium heat in oil for 3 to 5 minutes until slightly wilted.
  2. Stir in ricotta and cook for 1 minute. Set aside and allow to cool.
  3. Cut slits into chicken breasts about 75% of the way down (hasselback style)
  4. Stuff spinach mixture into slits.
  5. Season with salt and pepper.
  6. Sprinkle cheese on top and shake paprika over all.
  7. Bake in 400 degree oven for 20 to 25 minutes.
