  • 1 pound strawberries, hulled (about 3 cups)
  • 2 teaspoons cornstarch
  • 1 tablespoon cold unsalted butter, cut into small pieces
  • 1 large egg yolk, for egg wash
  • 1 tablespoon water, for egg wash
