Bakery Style Blackberry Muffins
Ingredients
  • ½ cup plain nonfat Greek yogurt
  • 1 egg
  • 2 tablespoons melted butter
  • 1-½ teaspoons orange zest
  • 1 cup all-purpose flour
  • ⅓ cup zero-calorie sweetener (I used Lankato Monkfruit)
  • 1-½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ¾ cup fresh or frozen blackberries (I used frozen)
  • 1-½ teaspoons sanding sugar, for topping (optional but highly recommended)
