Enfrijoladas
Similar to Enchiladas, but covered in a bean sauce instead of enchilada sauce.

Ingredients
  • Approx 5 cups Cooked Beans
  • 1 cup Water
  • 1 tsp Minced Garlic
  • Salt to Taste
  • 1 8 oz. can *Chipotle Peppers in Adobo Sauce
  • 12 Corn Tortillas
  • 1 finely diced Onion
  • Crumbled Queso Fresco
  • Crema Mexicana
  • Homemade Salsa
Steps
  1. Blend the cooked beans with some water, minced garlic, salt, and half of the can of chipotle peppers. Heat the corn tortillas. Dip a tortilla in the bean sauce and place it on a plate. Fill the tortilla with queso fresco, fold it over like a taco, and transfer it to a plate. Do the same process for each tortilla. Once plated, sprinkle the diced onion and queso fresco over the top. Drizzle Crema Mexicana and serve with homemade salsa.
Notes
  • *Sometimes the chipotle peppers are not spicy and other times they are very spicy. Taste them first before blending them, to give you an idea of how spicy you want your sauce. Sometimes I only add 2 peppers and other times I've added the whole can.
