  • 8 ounces fresh cremini mushrooms, sliced
  • 2 tablespoons toasted sesame oil
  • 1 pack ramen noodles
  • 3 cups fresh baby spinach
  • 4 soft or hard boiled eggs, for serving
  • shredded carrots, green onions, chilies and cilantro, for serving
