Cinnamon Pineapple Upside-Down Cake
Ingredients
  • 200g unsalted butter, softened
  • 125g soft brown sugar
  • 1 tsp ground cinnamon
  • 1 ½ tsp vanilla bean paste
  • 1 pineapple, peeled, cut into quarters, core removed, then cut into 2cm slices
  • 140g golden caster sugar
  • 2 large eggs, plus 1 egg white, beaten
  • 1 ½ tsp baking powder
  • 200g plain flour
  • 75ml whole milk
  • crème fraîche, to serve (optional)
