  • 2 large shallots, diced
  • 6 ounces cremini mushrooms, thinly sliced
  • 1 garlic clove, minced
  • ½ cup dry red wine
  • 1 tablespoon fresh chopped thyme
  • ½ teaspoon Herbs de Provence
  • 3 tablespoons salted butter
  • 4 ounces creme fraiche, or sour cream
  • 1 tablespoon prepared horseradish
  • 1 teaspoon fresh chopped chives
  • kosher salt and fresh ground pepper
  • 4 - ¼ inch thick slices Comte cheese, or Cheddar
