Banana Zucchini Oatmeal Cups
Ingredients
  • 2 tbsp ground flaxseed + 6 tbsp water
  • ¼ cup almond butter
  • ¼ cup pure maple syrup
  • 3 medium ripe bananas
  • 2 small-medium zucchini, grated (don't squeeze water out)
  • ½ cup almond milk
  • 1 tsp vanilla extract
  • 3 cups old-fashioned oats
  • 1 tbsp baking powder
  • 1 tsp cinnamon
  • ¼ tsp salt
  • Optional add-ins: ¼ cup chocolate chips and/or walnuts
