Ingredients
  • 1 pint cherry tomatoes
  • 3 tablespoons extra-virgin olive oil, divided
  • ½ teaspoon fine salt, divided, or more as needed
  • ½ teaspoon freshly ground black pepper
  • 1 medium red onion, halved and thinly sliced, divided
  • Two (15-ounce) cans no-salt-added chickpeas (about 3 cups), drained and rinsed; may substitute 3 cups cooked chickpeas
  • One (2-inch) piece ginger, peeled and chopped (1 tablespoon)
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • ¼ to ½ cup water
  • ½ cup fresh cilantro or parsley leaves, for garnish
  • Cooked rice, for serving (optional)
