Zov’s Leeks Mushrooms Rice and Pine Nut Stuffing

The perfect stuffing for your Thanksgiving dinner from Zov's
Ingredients
  • 8 tablespoons unsalted butter
  • 4 large onions thinly sliced
  • 2 large leeks thinly sliced
  • 1 pound assorted wild mushrooms, crimini, stemmed shitake sliced
  • 3 tablespoons chopped fresh thyme
  • 6 cups canned low salt chicken broth
  • 3 tablespoons chopped fresh sage
  • 1 ½ cups wild rice (8 ounce package)
  • 1 ¼ cups jasmine rice
  • 1 ½ cups coarsely chopped dried apples (optional) or currants
  • 1 cup Italian parsley chopped
  • 1 cup pine nuts
