  • 2 tablespoons olive oil
  • ¾ teaspoon dried thyme
  • 1 bay leaf
  • 1 ½ pounds Yukon Gold potatoes (3 medium or 6 small)
  • ⅓ cup all-purpose flour
  • 1 (32-ounce) box low-sodium chicken broth (about 4 cups)
  • 2 cups whole or 2% milk
