Chickpea Pasta E Fagioli (Vegan, High Protein, Grain-Free}
Ingredients
  • 1 tablespoon olive oil (or oil of choice)
  • 4 large cloves garlic, finely chopped
  • 1 medium onion, chopped
  • 1 cup chopped celery
  • 2 medium carrots, chopped
  • fine sea salt and freshly ground black pepper
  • 5 cups water
  • 1 can (28-ounces) crushed tomatoes
  • 1 tablespoon dried Italian herb seasoning
  • 2 15-ounce cans butter beans or white beans, drained and rinsed
  • 6 ounces small elbow chickpea pasta (see notes for options)
  • Optional: finely chopped fresh parsely leaves
