Scallion and Cheddar Cathead Biscuits

  • 2 tablespoons (24g) baking powder
  • 1 teaspoon table salt
  • ¼ teaspoon granulated sugar
  • 16 tablespoons (227g) unsalted butter, cold; cut into ½” cubes
  • ½ cup (32g) scallions, chopped
  • 2 cups (227g) sharp cheddar cheese, grated
  • 1 teaspoon black pepper
  • 1 ½ to 2 cups (340g to 454g) buttermilk, as needed
  • 1 large egg, beaten with a pinch of salt (egg wash)
