Slow Cooker Chipotle Chicken Tortilla Soup
SK - This is so, so delicious!!! It took maybe 10 minutes to add the ingredients to the slow cooker. No preliminary prep. This would be easy and quick to make the night before, stick it in the fridge, and take out and slow cook the next morning. Ingredients
  • subheading: For soup:
  • 1 pound boneless skinless chicken breasts
  • 15 oz can black beans, drained and rinsed
  • 14.5 oz can fire-roasted diced tomatoes
  • 1 cup frozen corn kernels
  • 1 teaspoon chili powder
  • ½ to 1 teaspoon chipotle chili powder (depending on how much spice you prefer)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried cilantro
  • 4 cups chicken broth
  • subheading: For crunchy tortillas:
  • 4 to 6 corn tortillas
  • 1 tablespoon canola oil
  • 1 teaspoon garlic powder
  • subheading: For garnish (optional):
  • shredded cheese
  • avocado
  • sour cream
  • chopped cilantro
  • fresh lime juice
  • fresh tomatoes
