Raise your hand if you grew up loving pimento cheese! ♡ This retro Southern spread brings up some major nostalgia for me. We always used to look forward to opening those little store-bought jars of it for snack time when we were kids, and spreading it on crispy celery sticks etc And even though I was a very picky eater back in the day — oh my goodness — I absolutely loved this stuff. And later, a Friend showed me how to Make it! Pimento cheese is incredibly easy to whip up in just 10 minutes or so.
Ingredients
  • 1 (8-ounce) package cream cheese, room temperature
  • 1 (4-ounce) package diced pimentos (or diced roasted red peppers), drained
  • 2 cups ( 8 ounces) shredded extra-sharp cheddar cheese
  • ½ cup thinly-sliced green onions
  • ⅓ cup mayo
  • ¼ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • a few shakes of Tabasco sauce
  • fine sea salt and freshly-cracked black pepper
