Pierre Franey's Roast Chicken

Ingredients
  • 1 chicken, 3 to 3 ½ pounds, with giblets
  • 1 bay leaf
  • 2 sprigs fresh thyme or ½ teaspoon dried
  • 1 clove garlic, peeled
  • Salt to taste
  • Freshly ground pepper to taste
  • 1 tablespoon vegetable oil
  • 1 whole onion, peeled and cut in half
  • 2 tablespoons butter
  • ½ cup chicken stock
  • ¼ cup water
