Keto Q&E - Chicken Cheese "Rice"
Quick and easy skillet meal using canned chicken meat and frozen riced cauliflower and broccoli.
Ingredients
  • 1 Tbsp Olive Oil
  • 1 tsp minced garlic, or garlic powder to taste
  • ½ small onion, diced or 1 Tbsp dried minced onions
  • 1 to 2 bags frozen Green Giant riced cauliflower and broccoli
  • Salt
  • Pepper
  • 1 to 2 can chicken meat, drained
  • 3 to 6 ounces shredded cheddar
Steps
  1. Heat olive oil in a skillet on low-medium heat
  2. Add minced garlic and lightly brown
  3. Add onion and cook until somewhat translucent
  4. Add frozen riced cauliflower and broccoli
  5. Cook until riced veggies are soft, about 5 to 6 minutes, stirring occassionally
  6. Add chicken and mix
  7. Salt and pepper to taste
  8. Top with shredded cheese and cover
  9. Heat until cheese melts
  10. Serve
