Crustless Vegetable Quiche
Ingredients
  • 10 egg whites
  • 2 whole eggs
  • ½ cup skim milk
  • 1 teaspoon kosher salt, divided
  • 1 teaspoon dried parsley
  • ¼ teaspoon dried thyme
  • ¼ teaspoon black pepper
  • ½ teaspoon hot sauce (optional)
  • 16 ounces fat free cottage cheese
  • 1 cup shredded monterey jack cheese, divided
  • 1 cup shredded reduced fat sharp cheddar cheese, divided
  • ⅓ cup all purpose flour
  • 1 teaspoon baking powder
  • ½ of a yellow onion, diced
  • 1 large zucchini, halved lengthwise and sliced
  • 8 ounces mushrooms, sliced
  • 1 ½ cups asparagus, trimmed and cut into 2 inch pieces
  • 1 tomato, deseeded and thinly sliced
