Servings: 27 energy balls
Ingredients
  • 1 cup raw cashews
  • 1 cup soft dates
  • ¾ cup unsweetened shredded coconut
  • ¼ tsp vanilla extract
  • ⅛ tsp sea salt
Steps
  1. Add cashews into a food processor and pulse until they become flour-like.
  2. Add in the rest of the ingredients and pulse until one smooth texture.
  3. Roll the dough into small balls. Or use a cookie scoop to just scoop them out.
  4. Store in a refrigerator for at least 30 minutes before serving.
