Cowboy Crock Pot

Ingredients
  • 2 lbs lean ground beef or ground turkey
  • 5 medium potatoes , cubed
  • 1 can pinto beans, drained
  • 1 can Rotel, undrained
  • 1 can corn, drained
  • 1 cup reduced fat shredded cheddar
  • ½ cup diced onion
  • 3 cloves garlic, minced
  • Salt & pepper
  • ¼ cup water
Steps
  1. Brown the meat. Place cubed potatoes in crock pot. Sprinkle with salt and pepper. After you’ve drained beef/turkey pour evenly over potatoes. Add garlic and onion. Then add tomatoes, beans, corn, and water. Cover and cook on low 6 to 8 hours. Top with cheese and lettuce melt an additional 5 minutes before serving.
Notes
  • I used 1 lb of 99% fat free and 1 lb of 93% fat free ground turkey.
  • I used baby potatoes, roughly 1 ½ pounds.
  • I used reduced fat Colby jack cheese.
  • You could use chili beans instead of pinto but I wanted to keep the points down.
  • Topped with hot sauce!
